Subject firebird process hangs every aprox 10 days

Hello all!
I've been using firebird for some years, I'm really happy with the
features and performance that it provides.
I'm running into a problem with one server instalation. I have another
10 that do not have this problem, all of them have the same STACK:
UBUNTU 10.04FIREBIRD 2.1.4 (superserver)
On this particular server (20+ users) the database hangs every 10 days
aprox. The Firebird process just takes 100 % of the CPU and is not even
possible to connect to the server.
The firebird.log file is not very verbose, I copied some of the output
at the end of this post.
Some of the work that I have already done included upgrading firebird to
2.1.4 because a bug fix matched the description of the problem that I'm
having.
Is it possible to make firebird.log more verbose?
I'd rather not change the installation to classic but I'll take that
option if there is no other solution.
Using firebird 2.5 is not an option yet, I have not finished testing the
application on this version
