We use CentOS , Kubuntu, Ubuntu , Xubuntu , Lubuntu (lxde ) and on
strong video cards
compiz with gnome or kde (nvidia >8600 seems to be nice)

also on servers debian rocks , is too stable so sometimes we switch to unstable

There is too much FUD around so :
1.Ubuntu is the most popular distro google and distrowatch prooves it

2. Long term support for server is very long 5 years on servers

I guess nothing stop us to use ubuntu on server
there are many sites hosted on it (hint hint wikipedia)
also firebird + php is easy to install and use (debian way)

also you can install it manually on the machine (tar.gz)

lxde is very light i use it on my netbook and i like it (very simple and light)
