Mac and Linux are similar - both have a classic and a super server
environment. I personally prefere classic - this is, what comes with
the installer (the .dmg package). So your should read more about
classic.

There's no package for super server - you have to compile it yourself
(but you don't want it - it has nothing similar like embedded).

You don't need anything like "embedded" under classic - you can simply
connect to the server with the absolute path - just leave the IP
Adress.

everything in firebird on OS X is installed under
/Library/Frameworks/Firebird.Framework ...

Don't think too much of linux - they use .so files Mac useses dylib
files for shared libraries. For compiling firebird, you have to
explicit ask for GNU utils (doing some export stuff). You have to tweak
firebird.conf for correct settings - eg. for UDFs (databaseroot? or
something similar).
