Cat 6 cables have far better noise rejection properties. It's not a myth.
Cat 5/5e cables will work on short runs, but you will get performance
problems as you stretch out the run.
You've got to have tighter twists.

Usually it's crappy NIC's / crappy switches / crappy drivers. Of course
not a firebird problem at all.
Have you tried using something like iperf[1] to measure the network
performance under load?
