Just for a bit of closure with this one, I found that the page size on
restore (gbak -r -p <n> ....) can dramatically affect the time taken to
restore a backup. On a 3.2G database restore times with different page
sizes were:
1k -> 196 mins
4k -> 84 mins
8k -> 73 mins
16k -> 65 mins

I believe 1k is the default with 1.0.3, or at least that's what it is on
our gdb under Linux.
