Remember that a Firebird Server is a Server that could exist not just for
your application to use. Maybe removing older versions will make some other
application to stop working in your client site.

It depends. You should check if Firebird is running as an aplication or as a
service. If it's running as an application, it enough to remove the registry
keys. If not you should run instsvc (of the older version) to delete the
services.
