Hmmmm
I've looked around and ISO8859-1
ISO8859-1 Western Europe: Danish, Dutch, English, Faeroese, Finnish, Flemish, French, German, Icelandic, Irish, Italian, Norwegian, Portuguese, Spanish, and Swedish. Many other languages can be written with this.
So it ought to work.
I'll look into it further.

I am still having real problems creating a table that will take Danish characters
I have tried
ISO8859_1
and unicode_fss
Both of these helped in that they accepted more characters but still they both still complained about the text below.
Vindebækvej 48
Could anyone tell me which char set would work as I am really struggling.
