This is the correct place to ask about IB_SQL.

I am puzzled. The only place I see /* defaulted */ is when choosing
the "Source" option in the browse dialog. When I use the actual
metadata extract dialog I get the true default values showing.

Note: What you see as the "source" in the browse dialog is only very
basic (was written a long time ago). The metadata extract dialog
was written (and rewritten) much more recently has is much more
complete and accurate.
