The choice of plans are made based in the index statistics. With different index statistics comes different plans...
As Ann explained, Backup/Restore updates them.

This is what I wanted to say... But, I wasn't very clear.

Updating the index statistics before the backup you will have sure that the bad choices of the plan are because of the wrong statistics.
