Where can I find the "embedded" version? (Installation and documentation)

Yes, but you should use the 2.0.x version, not the 2.1.x.
Version 2.1 is compiled with a newer version of the compiler: it
requires that some runtime files are installed in the host computer and
if you run from an usb stick you cannot be sure that the runtime is present.
Version 2.0 is compiled with Visual Studio 2003 and it does not have
this problem. Another solution could be compiling 2.1 by yourself with
VS2003, if you can do it.
