Hi Dany,
Firebird 2.1.1 is the most up-to-date production stable release.
2.5 Alpha 1 is a preview of the upcoming new version, but as the name says, it's still in Alpha, thus not ready for production systems.
2.0.5 is a sub-version of the earlier version, but some bugs have been corrected since 2.0.4, thus it's a release candidate for the bug fixed version.
2.1.1 is the latest release of Firebird 2.1, so use that one :-)
BTW: The Firebird production and testing cycle is like this:
Alpha
Beta
Release Candidate
Final (ready for production systems)
If you view firebirdsql.org, you'll see "Latest release" at the top, and it says 2.1.1 too!

I don't understand clearly why there are two different releases:
Firebird 2.0.5 RC2 (release candidate 2)
Firebird 2.5 Alpha 1
Moreover, It seams 2.0.5 is newer than 2.5 Alpha 1, and that confuses
me more.
What is last/best for deploying our applications?
