My IB 5.6 database is dialect 1. I made a backup file with the IB Server
Manager that comes with the IB 5.6 install.

I then restored with FB gbak via the command line. Didn't see any option in
the last step to specify a dialect.

I take it that my FB database is now dialect 1.

How do I check? If it is not then how do I change?

Migrate your databases to Dialect 1 databases, not Dialect 3.

You really need to plan a migration to Dialect 3; since:

- there are new data types
- there is a higher level of ambiguity reporting -- statements will not
run
- you should really re-test your application after this migration.

Dialect 1 databases need very little testing.
