I play with the employees.fdb when I am not sure of what I am
doing-the Table is actually 'Patients'. Not that there is anything
wrong with female patients, but, in general you want to avoid
scheduling prostate exams and so on.
Incidentally, the look up table is as follows:

M= Male, Self-Report – An individual who reports to be male, the sex
that ordinarily produces sperm.
F = Female, Self-Report – An individual who reports to be female, the
sex that ordinarily produces ova.
I = Intersex – A person (one of unisexual specimens) who is born with
genitalia and/or secondary sexual characteristics of indeterminate
sex, or which combine features of both sexes.
G=Male-to-Female Transsexual – A person who was assigned to the male
gender at birth based on physical characteristics but who identifies
psychologically and emotionally as female.
B=Female-to-Male Transsexual – A person who was assigned to the female
gender at birth based on physical characteristics but who identifies
psychologically and emotionally as male.
X=Unspecified – Not stated explicitly or in detail.
Z=Unknown - Not observed, not recorded, or refused.
