Not sure what exactly you are looking for in the "text file".

If you just want the DDL scripts then there is an option to
edit the scripts before they are executed - at that time you
could copy them out to a text file if desired. (ie. There
are two scripts, one before data transfer and one after.)

Note that DBak just uses metadata extract features of IBO,
so the same information is available from the ib_sql tool
from the ibobjects website.
