Assuming you're talking about Superserver (since there isn't really a
"service" to stop with Classic...) go to the /bin directory and use the
fbmgr utility to shut down the server:

./fbmgr -shut -password oPQrst8y (or whatever your SYSDBA password is)

or, if you're still using v.1.0.x:
./ibmgr -shut -password uYYTre43
