You should have isql, gbak, gsec and other tools to get you starting.
Read IB6 Operations Guide to learn how to work with those tools.

For GUI access, AFAIK there's a PHP and Apache version for Mac, so you
could install that, and ibWebAdmin, so you can interface wirh your
database via web browser.

For development, there's IBPP library (www.ibpp.org), which will soon
(matter of days) be ported to Mac. Actually, it already works, just
needs some testing. You can join ibpp-discuss group at sourceforge to
talk about it.
