There's no "default directory" - a database will be created in the
directory specified by the CREATE DATABASE statement. But you need to make it
CREATE DATABASE 'localhost:/home/interbase/mydatabase.gdb' ...etc.

If you just do
CREATE DATABASE 'mydatabase.gdb' it will go into the current
directory. And, yes, you're right, the examples in the manual are bad!
