If you are going to try to recover the file string by string then WinHex by Stefan
Fleischman is an excellent too. It allows templates and rules and other things.

I have recovered gigabytes of data from my own disks and was able to process billions of
dollars of data from a large corrupt database (that was still being used) as a result of
using WinHex to analyse it.
