Use _any_ client tool of choice and connect to a database on the server,
either locally or remotely. For instance, try :

isql /opt/interbase/examples/employee.gdb

at a console prompt.

The trick is inetd. It listens on port 3050 and kicks off a server process for
you. Of course, you need inetd running. Some distributions now use xinetd,
which works in a similar way, but I don't believe the configuration is
automatic. However, the file you need is in /opt/interbase/misc.
