from the manual: dialect selects the default SQL dialect for any
statement executed within a connection, and it defaults to the highest
one supported by client libraries.

So it will usually default to dialect 3 these days.

The employee.fdb from the firebird 1.5 distribution is finally in
dialect 3. But the one from firbird 1.0 was dialect 1.
