$_SERVER['REMOTE_ADDR'] was what I was looking for. It's
amazing how these things 'hide' themselves when you are
looking too hard.

The IP address changing is not a problem, I just use
gethostbyaddr(), but I expect to be using a fixed HOSTS
table anyway.

As an aside. There is $_SERVER and $HTTP_SERVER_VAR
Any idea which is the preferred name for ongoing code?
